
Tomato Soup
This super easy one pot tomato soup is hearty, smoky, and made with roasted veggies like tomatoes, onion, garlic, and bell pepper. Drizzled with olive oil and seasoned with thyme, salt, and pepper, it’s roasted to perfection and finished with chicken bone broth, honey, and smoked paprika for a comforting flavor. The addition of cream and basil adds richness, making it a perfect cozy meal.
What you need

tsp smoked paprika
tbsp honey

red bell pepper

cup cream

cup olive oil

Instructions
1: Preheat your oven to 400°F. 2: Toss the tomatoes, cherry tomatoes, onion, garlic, and red bell pepper into your Dutch oven. 3: Drizzle with olive oil, season with thyme, salt, and pepper. 4: Roast everything uncovered for about 1 hour until soft and slightly charred. 5: Pull it out of the oven, add chicken bone broth, honey, and smoked paprika. Blend it smooth with an immersion blender. 6: Taste it, season as needed, and let it simmer on low for 10–15 minutes. 7: Stir in the cream and chopped basil (and chili flakes if you’d like some more heat). 8: Ladle it up, garnish with a swirl of cream and basil, and enjoy.View original recipe
