A delicious and healthy nice cream made with a pineapple layer and a strawberry layer. Both layers include coconut cream and raw honey and are blended until smooth. Perfect for a refreshing dessert served in the hollowed pineapple rind.

What you need

tsp vanilla extract
cup raw honey

tbsp lemon juice

cup strawberries

pinch fine sea salt

cup pineapple
Instructions
1: Slice the top off your pineapple. Scoop out the flesh and freeze it (cut into chunks for easier blending). Save the hollowed rind—this will be your serving bowl. 2: In a food processor, blend the pineapple layer ingredients until smooth. Spread into a loaf pan. 3: Blend the strawberry layer the same way. Add on top of the pineapple layer in the pan. Swirl gently with a spoon. 4: Freeze for 2–4 hours until scoopable, then serve it back inside the pineapple rind. 5: Pro Tip: Cut your fruit into small pieces before freezing—your food processor will thank you.View original recipe
