1: Preheat your oven to 425°F (220°C). 2: Cut the peaches into even slices for uniform cooking. Place the peach slices in a mixing bowl and drizzle with melted coconut oil and 2 tablespoons of honey. Toss gently to coat evenly. 3: Choose a heavy-bottomed, oven-safe pan for even heat distribution. Arrange the peach slices in a single layer in the pan. 4: Place the pan in the preheated oven and bake for 20 minutes. 5: After 20 minutes, carefully flip the peach slices to ensure even caramelization on both sides. Drizzle an additional small amount of honey over the peaches if desired. 6: Continue baking for an additional 10-15 minutes, keeping a close eye on the peaches to prevent burning. 7: Allow the caramelized peaches to cool completely in the pan. Once cooled, transfer the peaches to an ice cube tray or cookie sheet and freeze overnight. 8: Once the peaches are frozen, combine them in a food processor with 1/4 cup honey, coconut cream, vanilla extract, lemon juice, and a pinch of salt.
