tsp vanilla extract

tbsp maple syrup

tsp nutmeg

tsp ground cinnamon

cup coconut milk

tbsp coconut oil

cup pecan

Instructions
1: Add carrots and bananas, coconut oil, 1 teaspoon cinnamon, and 1/2 teaspoon nutmeg to Dutch oven and cook at 400 degrees for 30 minutes at 425. 2: Allow to cool, place on tray with parchment paper, and then freeze overnight. 3: Add carrots, bananas, vanilla extract, zest of orange, orange juice, coconut milk, and maple syrup to food processor and blend. 4: (Optional) for firmer ice cream consistency place in freezer for 40 minutes, stirring after 20 minutes (OR) use a cold stone ice cream plate. 5: Scoop and top with 1 teaspoon cinnamon and chopped pecans.View original recipe
