What you need

tbsp honey

tsp vanilla extract

Instructions
1: Preheat the oven to 425°F. 2: Place purple sweet potato directly on the oven rack and cook until very soft, about 45 minutes. 3: Remove the skin from the sweet potato, chop into small pieces, and freeze. 4: Add yogurt, honey, vanilla extract, and a pinch of salt to a food processor. 5: Blend in Açaí, frozen sweet potatoes, and frozen bananas using your food processor’s rotary grater attachment. 6: For a firmer ice cream texture, transfer to a bowl and freeze for 45 minutes (stirring after 20 minutes).
